We all know that breakfast is ruled by pork. These days’ chefs and home cooks alike are taking it to a whole new level. Bacon, sausage and ham move over (just a little), and make room for a new line of creative breakfast dishes that are incorporating the whole pig in new and imaginative ways!
Pulled Pork Pancakes– I went to The Red Wagon in Vancouver this past week and tried their infamous Pulled Pork Pancakes with Jack Daniels Maple Syrup. WOW is all I can say, I went with one of my good friends and we devoured this dish. I’m always on the hunt for new and creative pork dishes and this breakfast delivered!
Waffles with Bacon in them– Not sure if this is pure genius, or just lazy, but either way I love it! Bacon in waffles smothered in maple syrup is an amazing flavour combination. My Grandma used to do this so it is really a throwback to my childhood. Good news is, it is popping up on menus everywhere. Bacon is not new to the breakfast world, but it can be creatively added to any meal.
Eggs Benedict– with a twist! This open-faced breakfast sandwich made with poached eggs and Canadian bacon on an English muffin with buttery Hollandaise is getting a facelift in a delicious way. Chefs are experimenting with this classic and switching up the peameal bacon with anything from pork confit, hand-cured bacon and even tenderloin.
