Ham and Egg Cups

I had to write about these cute little cups because I keep seeing them all over Pinterest and have recently had them at a friend’s house. Not only are they easy to make, but they are absolutely delicious as well. Think eggs and bacon, all in one!

You can eat these delicious cups on their own, or serve them in-between an English muffin for a breakfast on the go! For a balanced breakfast serve with a fruit salad and a glass of milk. This recipe is perfect for serving a crowd, since you can cook the eggs in the oven. This gives you time to make the fruit salad! A few different recipes have cropped up all over the internet and here is mine.

Ham and Egg Cups!

Yield: 12 cups
Prep time: 10 minutes
Cooking Time: 20 minutes


12 pieces of ham
6 eggs
1 green onion, finely chopped
½ cup spinach, finely chopped
½ red pepper, finely chopped
1/3 cup cheddar cheese
Salt and pepper to taste

Cooking Directions

1. Pre-heat oven to 350˚F, line cupcake tray with ham slices.
2. In a mixing bowl, whisk together the remaining ingredients. Fill the ham slices evenly distributing the egg mixture.
3. Cook for 20 minutes or until the egg has set.
